Plotwise, the big picture is that time travellers have thrown out the original canon. It's already revealed that Kirk's parents were killed, and hinted that Spock meets Spock. This creates room for a true and total reboot while maintaining a veneer of continuity. New actors, new audience, new stories and new nostalgia pains. I hope that the new writers can write. If it bugs you too much, just imagine it as an alternate dimension. That Spock was the science officer for Pike and Kirk served on several ships before becoming captain of the enterprise, etc. I'm torn about that kind of thing, I suspect most people simply don't care about details and want a fun movie but what sets the Trek universe apart from so many is the internal consistency and rich character history.
